Great Leftovers Challenge 2010 - dad's rissoles

Great for using up any left over cold meat (lamb, pork or beef are best)
Mince leftover meat up into a bowl
Add a chopped onion and a few breadcrumbs
Add one egg and mix together well
Take small amounts of mixture and roll into balls.
Flatten slightly and shallow fry until cooked through.
serve with bubble & squeek (mashed and shallow fried left over veg and potatoes)

Golly I'd forgotten all about rissoles ... a regular item on our school dinners menu! These sound tasty though - I hate to think what was in our school ones :(
